cooking previously frozen food

We have access to a lot of apples in Sept/October.
We normally peel and core them and then cook them until they fall and freeze
the resulting mush in cartons.
Later, we take a frozen carton,defrost it and then make a number of apple
pies--ie we cook the apple mush in a pastry case. Then we refreeze the pies
and use them as necessary by defrosting and reheating.

Is there anything wrong with this procedure??????
